Where to Buy the Best Smokers
The smokers offer a unique flavor that is hard to replicate in grills. They can deliver a heavy smoke flavor with incredibly low temperatures. These might depend on the kind of smoker you choose, but they are our top picks.
Smokey Mountain Cooker Smoker Smoker 14″
The Weber Smokey line is the top pick for Max Hardy , owner and head chef of Coop Detroit because it meets all of the needs for both the professional and amateur smoker. The 14-inch model is the most compact of the three. It’s ideal for making delicious barbecue outside. The portable charcoal smoker includes a cover, steel-plated cooking grates and legs, as well as a thermometer built in. If you need more space to grill your meats you can order an 18-inch smoker for an additional $110, while the 22 inch smoker will cost you $210.

. This versatile charcoal grill can be used to roast, grill, smoke, bake, sear and more. It comes with a lifetime guarantee so you aren’t worried about any rust, or its ability to withstand all the elements. You can choose from seven sizes that will fit your yard space.
Best smoker grill combination: Kamado Joe Kamado Joe Classic I
, can be shipped to your home, however. It smokes meat starting at 225 degrees and can cook food up to 750 degrees. A slide-out drawer makes cleaning easy.
Styles of the Best Smokers
In addition to different heat sources you also have your choice of smoker styles, Mumford explained:
Offset. The smoke generation area is offset from where the food is, instead of directly underneath it, allowing for finer control of smoke injection. “These are practical-but-pricey,” he warned.
Direct. You can smoke under your food. He said that although it is more difficult to manage the smoke, this method works best because of the cost.
Drum. The drum is made of metal. Fox explained that you place the heat source, usually a wood fire or charcoal at the bottom. The item you’re cooking will hang from the bars running across the barrel’s top.
Vertical water smokers These “R2D2 cookers”, Fox said, are very popular among people who just get started. These upright cylinders come in electric or charcoal and “above the heat source is a water chamber, and this adds moisture to the heated air.” However, Mumford warned, although they are very forgiving in terms of temperature, the food can end up tasting more steamed than smoked so you have to be willing to trade flavor for convenience.
Vertical. This type of smoker is usually made from metal and looks similar to an upright cylinder. It’s best for home smoking.
Ceramic. Fox described a ceramic smoker as a charcoal grill that doubles up as a ceramic oven. The ceramic material retains heat better than metal.

Best Pellet Smoker/Best Gravity-Fed smoker: Masterbuilt Gravity series 560
Gravity-fed and pellet smokers are both good choices. Randolph admits that offsets are his favorite. Randolph says, “But last night, I was up till 11 o’clock feeding wood into an offset…you cannot walk away from that machine.” Gravity-fed and wood pellet grills both make it easy to avoid doing that. These pellet grills have the same convenience as a gas barbecue but with the charcoal-smoked flavor. Randolph enjoys these machines (he wrote even a cookbook about pellet grills). But he acknowledges that it may feel like cheating.
In the actual testing, things got close between the Masterbuilt and the Z Grills 450B pellet smoker . But ultimately the Masterbuilt held its temperature a little better. Also, it produced some of the finest wings I have ever seen.
While assembly can be intimidating as I was required to attach the wires that connect the fan, thermostat, and digital controls, it worked flawlessly. This device has built-in thermometer slots, which are a wonderful feature. It also has an app that allows control over the smoker via bluetooth or Wi-Fi. This is definitely a great feature. My personal experience is that every app I have used for cooking or smoking has been slow and sluggish. This interface is great if you like controlling your smartphone.
It is also perfect for a combo smoker-grill. To convert from smoker to grill, you will need to flip the cast-iron grates on the “smoke”, which is beveled, to make the skillets flat. You can also adjust the thermostat to whatever temperature you desire. Although I haven’t tested the thermostat to see how broad it really covers, the thermostat can reach 700°F.
Other Smokers I Tested
To be clear, I have not chosen the “bests”, but I can say that all my testers were excellent and I highly recommend them.
Oklahoma Joe’s Highland Reverse Flow Offset Smoker was slightly lighter and more expensive than the CharGriller. While it did not retain heat as well as the Char-Griller, it took longer for the temperature to rise than either the Chargriller or Weber. This was a small issue if you are doing a 10-hour cooking session. You can grill directly in it, just like with the Char-Griller. The firebox, however, is not large enough to accommodate this. It does offer two configurations for the smokestack allowing some additional customizability and opportunity for experimentation.
Z Grills Pellet Grill 450B does all you can ask for in a pellet-grill. The Z Grills 450B Pellet Grill is simple to start and use with minimal attention. Online speculation has suggested that Z Grills might be Traeger’s killer, with solid equipment at a lower price. I found it to be just that. It didn’t hold temperature quite as well as the Masterbuilt and the reading on the digital display seemed slightly off compared to my thermometer, though I don’t want to judge too harshly on that since all grills can have hot spots and cold spots. However, the Masterbuilt does have Wi-Fi connectivity. This can, at times, be more hassle than it’s worth. Even though the manufacturer doesn’t say it can reach 700 degrees, this grill works very well both as a smoker and a grill. The best choice for a low-cost pellet grill is this one.
Charbroil Digital Electric Smoker wasn’t the best machine for me. The app and interface of the vertical smoker were difficult to use. The temperature fluctuated more than the others and the smoke I got from my wood chips was not as good (as Randolph pointed out, these problems aren’t unique to the Charboil; it’s likely to be an issue for many electric smokers).

How To Choose The Best Smoker For You
A smoker is an ostensibly a type barbecue designed to slow cook meats, fish and vegetables using pellets or wood chips. The smoker is especially good for cooking harder cuts of meat such as ribs or brisket, at low temperatures of 107°C (215°F) for four to seven hours. When done, the meat should literally fall off the bone or tear apart like a piece of pulled pork. However, smokers also excel at slow cooking delicate meats like lamb or ham as well as fish and vegetables. The narrow pinkish ring that is just below the crusty “bark” can often tell you if meat has been smoked.
A variety of fuels can be used to light up a smoker’s pipe: charcoal, or briquettes; gas, electricity and wood pellets. Charcoal is the most popular method and the smokers themselves are the cheapest to buy. It will be difficult for novices to find the right balance between the charcoal needed and the airflow through the vents. If there is too much ventilation, the temperature inside will rise and cause the charcoal to burn faster. Too little and the temperature may not be high enough.
The best type of charcoal barbecue for smoking is the Japanese style Kamado which has thick insulation to keep the heat in. Although you could smoke food using a regular barbecue grilling on coals and grilling grates, it is unlikely that the BBQ was designed to do so.
Since the fuels, electricity and propane gas are long-lasting, both electric and gasoline smokers will be better for longer smoking sessions. Be sure to have sufficient propane in your gas bottle so that it can last several hours. A majority of gas and electric smokers have a wood chipbox near the heat source that heats the wood to create smoke. Wood chips are made from different types of trees (mesquite maple oak cherry apple or oak), and they can infuse food with their own unique flavor.
If money is no problem, you will find the best kind of smoker that uses compressed wood chips as the fuel. To operate pellet grills such as the ones reviewed in this article, you need an electric source that can power an auger to feed pellets into a burner pot beneath your grill grate. The clever thing about pellet grills is that everything is controlled by a computer processor which ensures that any preset temperature remains that way for the entire duration of the cook. It works just like an indoor oven in that the temperature can be set for as long as you need. If you have the money and are new to grilling, a pellet barbecue is your best choice. The pellet grills can also be used for cooking standard cuts of meat, and they are capable of sear or grill steaks. And because they literally burn wood as the main fuel, everything that’s cooked on a pellet grill is infused with an authentically smokey flavour, whether its basic chicken wings, a Christmas ham or a Texas-style brisket.

Smoking takes outdoor cooking to the next level. Smoke penetrates meat during long, slow cooking, giving you a big-league taste at the backyard barbecue. To impress, you don’t necessarily need to buy expensive cuts. It is best to use tougher, more fatty cuts in order to lock in the moisture. Everything from pork roasts brisket chicken ribs will emerge fully cooked, tender, juicy, and full of savory, smoky flavor. It doesn’t matter whether you’re an expert or beginner, whether you prefer an electric or charcoal smoker, there is a smoker to suit your needs.

Type
One of the biggest differences between smokers and non-smokers is their choice in fuel, as well as how involved or low maintenance they are with the process. You will start with charcoal. It’s a classic, but still finicky method for smoking. Raichlen says charcoal is his preferred fuel for smoking. Wood chunks or chips are an added bonus. The process is as enjoyable as the finished product. “I’m a live fire guy: I love the act of lighting, building, and attending to a fire, and though it’s not necessarily the most convenient or easiest option, I think you get the best smoke flavor with that combination of charcoal and hardwood,” he explains. The pit barrel smokers can use charcoal as well. “The food is hung from the bars on top. Charcoal goes in the bottom,” Raichlen said. “It’s not quite as effective for smoking, but a lot of people like them because they’re very affordable.” Then there are pellet smokers, which use puck-like compressed hardwood pellets for fuel (charcoal and sawdust pellets are options, too), which burn in a separate, lower compartment. Smoke from the smoking chamber circulates through the interior of the smoker and heats up the food on the grill grates. It’s almost like convection oven. Karmel loves using pellet grills to smoke. “An electric fan controls temperature so you can get a very consistent temperature throughout your crop. This is very important.” Raichlen thinks that pellet grills offer “great convenience”, with perhaps less complex smoke flavors, than charcoal.
Electric smokers use metal heating elements, with wood pucks for the smoke element. Raichlen states that electric smokers have the advantage of being able to control their temperature and set the time, as opposed to constantly monitoring its progress. Raichlen does find that the electric model smokes differently to wood or charcoal.
An offset barrel smoker or stick burner smoker might be a better option for you if your skills are already good enough. They’re significantly pricier and require a lot of attention, and the name refers to the fuel type: The “sticks” in this case are whole logs, rather than charcoal or wood chips. A offset barrel smoker typically uses steel oil pipes and has a 16- to 20-inch barrel. Raichlen stated that while some models have metal boxes rather than metal piping but all of them work the same: A firebox is on one side and a cooking chamber at the middle. The chimney draws out the heat. Although they are more expensive and require more maintenance, these barbecues can be great, even with their higher prices.
